125g BUTTER, SOFTENED
1 Tsp VANILLA ESSENCE
3/4 CUP (165g) CASTER SUGAR
2 EGGS
1 1/2 CUPS (225g) SELF-RAISING FLOUR
1/2 CUP (125ml) MILK
PREHEAT OVEN TO 180 DEGREES. GREASE AND LINE PAN.
BEAT BUTTER, ESSENCE AND CASTER SUGAR IN BOWL WITH ELECTRIC BEATER UNTIL LIGHT AND FLUFFY. BEAT IN EGGS, ONE AT A TIME, UNTIL COMBINED. STIR IN FLOUR AND MILK, IN TWO BATCHES. SPREAD MIXTURE INTO PREPARED PAN. BAKE UNTIL COOKED. STAND IN THE PAN FOR 5mins, TURN OUT ON WIRE RACK. COOL AND THEN DECORATE.

TO MARBLE A BUTTER CAKE, MAKE BUTTER CAKE MIXTURE AS ABOVE. PLACE PORTIONS OF THE CAKE MIXTURE INTO DIFFERENT BOWLS, THEN TINT EACH DESIRED COLOUR. DOLLOP SPOONFULS OF THE MIXTURE INTO THE PREPARED PAN, ALTERNATING COLOURS, THEN GENTLY SWIRL TOGETHER WITH A SKEWER OR SPOON, TO CREATE MARBLE EFFECT. BAKE UNTIL COOKED.
RICH CHOCOLATE CAKE RECIPE -
1 1/3 CUPS (200g) SELF-RAISING FLOUR
1/2 CUP (50g) COCOA POWDER
125g BUTTER, SOFTENED
1 tsp VANILLA ESSENCE
1 1/4 CUPS (275g) CASTER SUGAR
2 EGGS
2/3 CUP (160ml) WATER
PREHEAT OVEN TO 180 DEGREES. GREASE (AND LINE) PAN.
SIFT FLOUR AND COCOA INTO BOWL, ADD REMAINING INGREDIENTS; BEAT ON LOW SPEED WITH AN ELECTRIC BEATER/MIXER UNTIL INGREDIENTS ARE COMBINED. INCREASE THE SPEED TO MEDIUM; BEAT FOR 3 MINUTES OR UNTIL MIXTURE IS SMOOTH AND CHANGED TO A LIGHTER COLOUR. SPREAD INTO PREPARED PAN. BAKE IN OVEN UNTIL COOKED. STAND CAKE IN PAN FOR 5 MINUTES AND THEN TURN OUT ONTO A COOLING RACK. COOL AND THEN DECORATE.
